Alexandra in the kitchen, Visage on stage and a bonfire on the beach -- it's Under the Caribbean Moon VI

Food, folks and fun is what makes Under the Caribbean Moon a must attend event. Alexandra Maillis-Lynch has gone around the world and back exploring different ethnic cuisines which she has fused with local and Caribbean flavors to showcase at her hugely successful Events by Alexandra Under the Caribbean Moon (UTCM) events and now she’s bringing it back home for the sixth edition of UTCM.

Last year Maillis-Lynch and her team of coordinators showcased the tastes of the Riviera Maya at the fifth version of UTCM with Mexico meeting the Caribbean; this year she encourages people to indulge their taste buds with the exotic, yet familiar and nostalgic flavors of grandma’s cooking with her Bahama Fusion event in which local ingredients will intermingle with international flavors.


Maillis-Lynch’s island fusion cuisine promises to entice and challenge your thoughts about Bahamian and Caribbean food. And there’s a spot for you, as Maillis-Lynch can accommodate up to 400 people at the Adelaide Beach location.


“It’s going to be good island flavors that will remind us of home with a little twist,” said coordinator Alexa-Rae B. Smith of Saturday’s event.


Featured on the menu between 8 p.m. and 10 p.m. will be assorted Caribbean crostini, callaloo dip with plantain and sweet potato crisps, conch and crab spring rolls with Bahamian cocktail sauce and voodoo cocktail sauce, Junkanoo croquettes (ham, corn and grits) with mango aioli, ackee wontons with papaya dipping sauce, deep fried macaroni and cheese bites, crunchy chicken bites with tropical Caesar salad in waffle cones with a passion fruit cream, Creole fried mackerel patties, grilled rib nibs with sugarcane and Guinness glaze and cassava fries and stewed conch poutine.


The 10 p.m. to 12 midnight menu will feature Haitian lamb stew with coconut rice, rasta pasta, grilled flank steak with sweet jerk glaze, grilled fish pancakes with onions, green pepper, tomatoes, and fresh thyme with fever grass coconut cream sauce.


The spice table will showcase mango goat pepper jam, hot pepper jelly, mango goat pepper barbecue sauce, green mango souskai and ripe mango chutney.


Assorted passed mini dessert bites will satisfy the sweet tooth.


At 1 a.m. the menu unfolds into breakfast items featuring pig’s feet souse, chicken souse, boiled fish and Johnny cake — and toting will not be frowned upon. It will actually be encouraged. They won’t wrap your souse bowl in foil, but will send you off with a neatly packaged breakfast container for you to enjoy at your leisure, because you certainly will have had more than your fill during the course of the evening.


“For the most part the food is the number one thing about our events and what people look forward to. Persons that attend regular UTCM events and can remember August Moon (restaurant) know the menu is never the same. Persons who are new and just getting warmed up to her [Maillis-Lynch] will find the food rustic and in abundance,” said Smith.



DJ Pencil will provide the entertainment for the night, with Visage topping of the evening with a live performance. Smith said the ultimate party band would be a wonderful new dynamic to the evening as they work to grow the UTCM brand.


“We wanted to do something different to show patrons that we put love into it and are concerned with what they would want so we get creative in the way we decorate, express ourselves through food, the décor and the entertainment.”


The standard bonfire is always an intriguing factor to the evening.


UTCM will be held on Saturday at 8 p.m. at Maillis-Lynch’s Adelaide Beach property. Tickets are $100, includes two drinks and a midnight breakfast. The dress is as usual summer sexy — relaxed and prepared to have fun.


“It’s about networking with a different crowd and getting out of your comfort zone, and coming out and putting yourself in an atmosphere to expand your mind,” said Smith.


Also new to this year’s UTCM event will be a shuttle system for those patrons that don’t want to drive to Adelaide. The shuttle will meet the patrons that want to take advantage of it at a central location and bus them to Adelaide for an extra $25 round-trip. A signature cocktail is included with the shuttle ticket.
