"I've never met a crawfish I didn't like"

You know them as lobsters … one of the best, most succulent seafood delicacies you'll ever taste. But here in The Bahamas we call them crawfish. Same incredible taste, just a different name.

The big news is that it's that time again … crawfish season! All of us here in The Bahamas eagerly await the August 1st opening of the season and already it's off to a great start. The reefs just off our beach at Palm Cay are teaming with spiny lobsters (crawfish to us locals) … and the sweet tender white meat is one of my fresh seafood favourites. Just the other day, we went out diving in the warm turquoise waters off Palm Cay.

Surrounded by schools of translucent, neon-coloured fish, we pulled in a succulent haul of some fine looking lobsters. What a dinner we had that night … boiled crawfish seasoned and baked in lemon sauce. So simple and so fantastic! Those flavourful meaty tails just melt in your mouth.

If you want to try your hand at catching crawfish, all you need to get started is tickle sticks and a good dive bag with a wire enforced ring. Or you can go out on a charter. They’ll provide all the gear plus take you to some of the prime locations.
