Prep time : 10 minutes
Servings : 2-4
• 1 bunch of kale (4 cups torn in pieces)
• ¼ cup onions
• 1 cup sprouts
• ½ cup shredded raw sweet potato/carrot
• ½ cup quinoa
• ¼ nutritional yeast
• 1 – 1.5 sheets nori cut up in small pieces
Dressing
• 1 avocado
• 2 tablespoons balsamic vinegar
• Pinch cayenne
• Salt and pepper to taste
Directions
1. Cook quinoa and put aside to cool.
2. Wash and dry kale. Remove greens for stems and tear into small bite size pieces.
3. Cut onion into small ¼ inch slivers 4. Grate sweet potato w/ cheese grater
5. Add sprouts, and mix and spread out all ingredients.
Dressing
1. Mash avocado until creamy, add all other dressing ingredients and combine.
2. Add to salad and mix very well. You want the dressing to cover everything. Can massage in if you want, or cover dish and shake.
