We Must Captivate Minds of Young Cooks

Position: Chef at Old Fort Bay Club Guardian Business: Can you briefly describe your experience in the tourism sector and what your role is today? Shanique: I am a chef de partie at the Old Fort Bay Club. Being in this field is a joy. I have had the opportunity to prepare meals for a vast number of people and I love it. I am a small fish in a big pond when it comes to this field, but I do the best I can and enjoy it. I love being in this field and satisfying our tourists and locals through the art of food. GB: Why did you choose to work in tourism as a career? Shanique: I didn't choose this job; it choose me, cooking for my family from the age of 10 and going from there. It grew on me and became my love and passion.

GB: What has been your most memorable moment? Shanique I will never forget when I placed third in the food competition to become a part of the Bahamas Culinary Team. It was a step that said: you are going to do great things. Being the only female that competed in the hot food, and to place, was a great feeling to have. The fact you get to represent your country was an even better reward. GB: Has the industry changed since you started your career? How? Shanique: Yes, it has changed. We as Bahamians always try to outdo each other, making the meal more enjoyable to eat and interesting to look at. So it has changed for the better.

You no longer get just food when you are dining; you get to experience a great number of flavors and creativity. GB: What should The Bahamas focus on to stay competitive? Shanique: As the world is currently changing we need to keep up with the times. As Bahamians we should focus on the proper training of up-and-coming young chefs because without them, the Bahamian flair in food would be nonexistent.

Captivate their minds and hearts with lots of knowledge about this field so they would want to venture into it. GB: What advice would you give to a young person who is considering a career in tourism? Shanique: This job is not easy if you don't have love, will power and dedication. It is a lot of hard work, long hours and demanding clients. Their needs and wants come first, so you have to be willing to comply. You have to be willing to give it your all and best at all times.
