It’s going to be a summer sexy weekend by the sea, under the stars, around the bonfire, listening to cool beats while indulging in exciting fresh flavors from south of the border as Events by Alexandra presents Under the Caribbean Moon V.

Maillis-Lynch invites you to explore the Riviera Maya where the Caribbean meets Mexico with her tonight at the Maillis Beach Pavilion.

“We want everyone to come dressed casually — summer sexy … not in high heels, but relaxed and ready to have fun.”

Under the Caribbean Moon is about the ambiance, the people and the experiences. For this fifth edition, Maillis-Lynch will be offering new exciting elements to the evening including showcasing salsa dancers among the surprises to keep people more entertained.

“Sometimes we just leave people to sit and enjoy themselves … I just like being left to listen to music and sit, but not everyone likes that,” she said. “The bonfire will be going and I think it will be fun for what we have planned.”

And of course, her Maillis-Lynch fusion touch will be on display as the Mexico meets the Caribbean in the food being offered — roast goat, pork carnitas and a taco bar with fish and skirt steak among the offerings, including a Mexican way of doing conch with a crab meat sauce which she thinks will go over very well with patrons. She will also prepare traditional Mexican fare to go with her fusions.

“We’re pretending that we’re in Cancun for the night,” said Maillis-Lynch. “It’s really interesting how much is really similar, just with the Mexican touch.

For the fifth version, the Dirty Mule, a drink that has been a staple of the event, has been shelved. The tequila will be flowing along with a mango drank, and a drink showcasing ginger.

“I want people to feel welcome. I want them to have fun on a beautiful beach in a relaxed atmosphere. I want people to leave having experienced great food and great drinks. It’s not a come down and party until you’re sick drunk, but we do have a lot of tequila flowing.”

At previous editions of Under the Caribbean Moon, Maillis-Lynch has showcased the coming together of old world and new world cuisine; a take on the cuisine from around the Caribbean; and presented an Asian influenced event.

Maillis-Lynch said this fifth edition could possibly be the final Under the Caribbean Moon event, but that Events by Alexandra won’t stop doing events, and that she will be brainstorming on doing something different.
