Mackey confirmed for Olympic team

It was originally thought that Trevorvano Mackey made the 'A' standard in the men's 200 meters (m) for the Olympic Games by about half hour before the London deadline. However, according to reports, the London Organising Committee of the Olympic and Paralympic Games (LOCOG) stated that the 12 midday deadline on July 8 was based on the actual time in London, England - Greenwich Mean Time (GMT) plus one - and not Eastern Standard Time (EST) here in The Bahamas nor Central Daylight Time (CDT) in Guanajuato, Mexico, where Mackey was competing.
Mackey dipped below the 'A' standard, 20.55 seconds, by running a blistering 20.52 seconds in to a headwind at the North America, Central America and Caribbean (NACAC) Under-23 Championships in Guanajuato, Mexico. That stunning performance came in the men's 200m final and earned him a fourth place finish. More importantly, it was thought to have solidified his spot on The Bahamas' Olympic team.
According to Bahamas Olympic Committee (BOC) Secretary General Romell 'Fish' Knowles, the matter of Mackey qualifying in time or not was a 'bone of contention' with LOCOG, but thankfully, they eventually ruled in The Bahamas' favor.
"Initially, LOCOG was actually suggesting that it was 12 o'clock their time and not 12 o'clock our time. Obviously, there was a communication issue somewhere," said Knowles. "Thankfully, it eventually worked out in The Bahamas' favor. They had said originally that they communicated it effectively but it wasn't clear at all, especially on our end. Some of the people in LOCOG actually thought it was 12 o'clock wherever you are in the world, and that helped our case a lot. In the end, LOCOG accommodated us and that was cool."
Mackey's addition to Team Bahamas lifted the total number of athletes on the squad to 24 - 23 in track and field, and just one swimmer - Arianna Vanderpool-Wallace.
After he qualified on the final day of the 18-month long qualifying period, BOC officials rushed to have his name added to the entry list so that it can be approved by LOCOG. The deadline for submission of the entry list to LOCOG was 12 midnight July 9, based on the actual time in London. Mackey qualified around 11:30 a.m. in the men's 200m final at the NACAC Under-23 Championships on July 8, in Mexico. That was around 5:30 p.m. in London.
"One of the main challenges that we had was that Mackey's name wasn't originally on the long list," said Knowles. "We made it a point to get all of his documentation filed at the last minute to ensure that he was on the Olympic team. LOCOG was very accommodating and eventually they allowed us to add him to the team."
Including Mackey, half of The Bahamas' 24-member Olympic team is under 25 years of age. With such a potent youth movement on the country's most acclaimed athletic squad, Knowles is extremely optimistic for the future of sports in The Bahamas.
"We noticed that there was a lot of transitioning this year. A lot of young people qualified for these Olympics and that bodes well for the future - that was very encouraging," said Knowles. "We are definitely headed in the right direction. In 2016, I think that we will perhaps have one of our strongest Olympic teams ever. A lot of these young guys have no idea of what to expect right now, because they have never been to the Olympic Games. This is set to be an eye-opening experience for many of them, so that if and when they return in 2016, they will have that experience under their belts."
The Games of the 30th Olympiad are set to commence July 27 in London, England, and will run through August 12 in the British capital. Swimmer Arianna Vanderpool-Wallace will be the first to see action for the 24-member team. She is set to swim in the heats of the 100-meter Free on Wednesday August 1, at the newly built Aquatics Centre in London.

Food 99/1: Lobster season is here!

August 1st always bring out the excitement in spiny lobster lovers everywhere as the new season begins again.  I, for one, have been working for a week now to figure out some combinations we will use for the menu at Flying Fish Modern Seafood.  Sometimes working in a restaurant with a reputation for modern thoughtful food and presentations takes me away from the simplicity of a fantastic ingredient.  You don't need much for an ingredient like lobster to shine.  So for the home cook, the best advice in preparation is keep it simple.    Don't try too much and find yourself wondering where did the lobster go?  Here's a few simple ways to make your lobster shine!

Vanilla-Butter Poached Lobster Tails and Watercress Parsley Salad with Citrus Vinaigrette

Ingredients:

1 lb. unsalted butter
2 large vanilla beans
2 or 3 sprigs tarragon
6 medium spiny lobster tails in the shell (about 5 ounces each with shell)
1 Tbsp. orange zest, grated

1/4 cup fresh orange juice
1 tsp. lemon zest, grated
1/2 lemon, juiced
1 tsp. lime zest, grated
1 lime, juiced
1 Tbsp. white wine vinegar
2 Tbsp. extra virgin olive oil
4 Tbsp. vanilla-butter, reserved after poaching
2 cups watercress
2 cups flat leaf parsley
2 cups cucumber, seeded and diced

We must help tourists 'see' our value

Company: Cape Santa Maria Beach Resort

Guardian Business: Can you briefly describe your experience in the tourism sector and what your role is today?

Starlene: I have been very fortunate to work in the tourism industry since 1997 at the beautiful Cape Santa Maria Beach Resort. I have met so many wonderful people and had the opportunity to tell them about my beautiful island, as well as teach them Bahamian culture. I started working as a waitress, then operations manager's assistant, duty manager and today I'm the front desk supervisor.

GB: Why did you choose to work in tourism as a career?

Starlene: I started working in the tourism industry not by choice; it was more out of convenience at the time. My career choice was to become a teacher. When I began working in the tourism industry, I realized three things that I really enjoyed. I enjoy meeting and interacting with our many guests from around the world. I find that every day is a learning experience, and I enjoy the fact that I am able to do so many different things. If I had to do it all over again, I would not change one single thing. I enjoy what I do and this is what makes my job rewarding.

GB: What has been your most memorable moment?

Starlene: I remembered this lady Kitty Burke that came along with her friends Barbara and Harry Reurink (a repeat guest.) She wanted to see why her friends choose to visit the same island almost every year.

She had just arrived on the island for a two week vacation, and she lost her glasses on the way down. She said she can't do anything without them, as they were her eyes. She was frantic and contemplating whether to stay or leave. She contacted her assistant back home and had her second pair expedited here. The second pair finally arrived, sent via FedEx, which is located in Hamilton about an hour and twenty minutes away. Now she's wondering how she's going to get them. She couldn't drive because she doesn't have her glasses. The only other option was to send a taxi; so she asked me to send a taxi for them. I was headed to Hamilton that afternoon anyway so I offered to get them for her. I made sure she got them that very night. She was happy to have her glasses. She offered to pay me but I refused to accept it. She told me that was very nice of me. I was just happy that she didn't have to cut her vacation short. To have her tell me that I really made her vacation, it was priceless! She realized why her friends love visiting the same place almost every year. Kitty returned in 2011 for four weeks and just emailed last month to say she'll be back in February and March 2013.

GB: Has the industry changed since you started your career? How?

Starlene: The industry has changed tremendously. Tourism on Long Island has grown substantially and the Internet assists us with this. People from around the world can find us at the click of a button. Back in 1997 there were only two resorts: Stella Maris Inn and Cape Santa Maria Beach Resort. Now there is a variety of accommodations to choose from, including fishing lodges to boutique hotels. The Ministry of Tourism also opened a local tourist office that provides a number of tourism support services including monitoring of service standards. There is also a complimentary Long Island Visitor Guide, which is very useful in providing general information about the island, things to do and see, and a restaurant guide. We now have guided tours to all the historical sites and local attractions like Dean's Blue Hole, Adderley's Plantation Ruins, Hamilton Cave Tour, just to name a few. Our tourism product is beginning to diversify itself, which can only enhance the visitor's overall experience.

GB: What should The Bahamas focus on to stay competitive?

Starlene: Long ago it was just having to advertise sun, sand and sea to attract tourists to our shores; but as you know, there are many other beautiful places to visit. To stay competitive in the tourism industry requires us to be unique in what we do and what we offer here in The Bahamas. The Bahamas is known for having the friendliest people. Many tourists arrive here as guests and leave feeling like family. This is why we have such a high return rate.

GB: What advice would you give to a young person who is considering a career in tourism?

Starlene: In order to succeed you need to have an open mind and be versatile in whatever position you choose. You also have to have a passion for serving others, and become an expert in your field; be the best at what you do, and do it willingly.

Impressive occupancy levels at Cape Eleuthera expected to continue

The occupancy level at the Cape Eleuthera Resort and Yacht Club has been quite impressive and is expected to remain so during the summer months, Guardian Business can confirm.
"We had an absolutely stellar April. We are approximately 15 points over last year and ran close to 85 percent. I attribute that to the Ministry of Tourism's Companions Fly Free offers to Nassau, an instant incentive out of Florida that has worked very well for us," according to Stephen Kappeler, the resort's general manager.
Kappeler also attributed Cape Eleuthera's success to the accessibility to the island, and recent events hosted that have driven traffic to the island.
"We also have three airports on this island that guests can come to, so seat availability has been pretty good for the island of Eleuthera," he explained.
"We have also had a number of smart events like One Eleuthera and the Ride for Hope, so besides a weekend like Easter that everybody is counting on to drive business, we had two other strategically placed events that brought lots of positive tourism numbers."
He noted that pre-bookings for the summer months are already shaping up to be quite strong.
"It's been very strong because never before have we had incentives this early in the year promoting summer travel. We are already seeing very strong pre-booking numbers which indicate that we will have a good summer, just as we did in spring," Kappeler noted.
He revealed to Guardian Business that the rising cost of fuel has also been a contributing factor in regards to increased business for the resort.
"Here at Cape Eleuthera, we have been finding that the higher cost of fuel has been attracting mega yachts, boats that are anywhere from 80, 90 feet and up to 200 feet. I believe that's because the mega yachts understand that going out to countries further out into the Caribbean is prohibitive due to the rising cost of fuel, so keeping it closer to home in The Bahamas where the waters are beautiful, with some of the best fishing and diving, etc., presents itself as a smart choice," he added.
However, Kappeler said he has been noticing a decline in smaller boats, those in 50-60 feet range.
"The flip side though, to some degree, is that smaller boats in the 50-60 foot range are not yachting as much because of the cost of fuel, even though The Bahamas is the closest choice and will likely be the most stable of the Caribbean island nations in the sense of boating because of our proximity to Florida."
He continued, The cost of fuel is absolutely playing a factor in yachting. It is important to note that The Bahamas' price per gallon of fuel is one of the cheaper ones in the Caribbean because they experience heavier taxation on a gallon of fuel," he added.
