TODD ENGLISH’S OLIVES TO OPEN AT ATLANTIS, PARADISE ISLAND IN ITS FIRST CARRIBEAN VENTURE

Fresh Seafood and Modern Mediterranean Fare Await at Olives Atlantis

PARADISE ISLAND, BAHAMAS – Renowned Chef Todd English introduces his famed Olives restaurant to Atlantis, Paradise Island, opening June 1, 2013. Featuring his signature open kitchen and Mediterranean cuisine, Olives Atlantis will provide a social and interactive dining experience for guests in the bustling Atlantis Casino. Designed by world-renowned interior architect and designer Jeffrey Beers, the restaurant is Olives’ first in the Caribbean.

“We are thrilled to welcome yet another celebrity chef to the Atlantis dining experience - Todd English’s Olives,” says George Markantonis, President and Managing Director of Atlantis, Paradise Island. “Olives will provide our guests with a taste of the Mediterranean in paradise. We are proud to add a restaurant of this caliber to our current world-class culinary roster.”

Olives Atlantis will offer a warm, casual dining experience with a three-meal-a-day menu, featuring world-renowned chef Todd English’s signature interpretive Mediterranean cuisine, as well as a variety of coastal dishes, each prepared using high-quality, seasonal and fresh ingredients. Olives Atlantis will feature an expansive open kitchen where English’s team will be preparing dishes from a rotisserie grill where guests can enjoy made-to-order cuts of meat and grilled fish such as the fresh catch–of-the-day.

The Raw Bar will offer a large fresh seafood display with daily offerings of shellfish, clams and oysters, and a wood-burning oven will showcase English’s infamous thin-crust flatbread pizzas. Our one-of-a-kind Italian-made SuperNova pasta machine will produce a selection of fresh, handmade pasta dishes daily that will entice and delight patrons. Guests can also sit and sip on Olives’ award-winning wines and delicious cocktails, as they take in the energy and excitement of the Atlantis Casino. The restaurant will also be opened until 3:00AM to satisfy late-night dining requests for those guests in the Casino or Atlantis’ adult nightclub, Aura.

“I’m excited to be collaborating with Atlantis to bring my Olives brand to the islands, and to capture a brand new dining audience,” said Chef Todd English. “I always look forward to collaborating with Jeffrey Beers who has designed many of my restaurants across the U.S. Together, with his design inspiration, I look to create a casual, yet exciting dining experience suitable for everyone– whether you’re seeking a quick and delicious lunch, an intimate and elegant couple’s dinner, or a leisurely and fun meal with family and friends.”

Olives Atlantis will feature a remarkable 6,850 square-foot interior with large vaulted ceilings and a rustic décor by Jeffrey Beers. From the buzzing social bar entrance with slot machine gaming to the private dining section, Olives Atlantis is designed to provide a rich, comfortable experience for all guests including families, late-night diners and casino patrons. The custom, oversized candelabras and wall scones deliver glimmering elegance with the soft twinkling of lights while rich wood beams and textured brick ceilings bring a sense of Mediterranean style; these materials are complemented by custom carpet inspired by ceramic tile designs and decorative limestone floor tile.

Guests can enjoy scenic views of the Atlantis Marina on the outdoor terrace while waiting before being shown to one of the restaurant’s 268-seats. Warm tones carry throughout the space, especially in the private dining rooms, where the walls are pumpkin-colored Venetian plaster detailed with antique mirrors. It was important to the design that every seat in the main dining room has a view of the open expo kitchen, a Todd English signature element.

“I love working with Todd, and on this collaboration at Atlantis we had an immediate boost from our excellent experience - and mutual respect - working on other Todd English projects. Olives Atlantis captures the essence of the original Olive’s restaurant in Boston, blending a rustic Mediterranean aesthetic with a Caribbean sensibility and the excitement of being at a casino. It’s thrilling to see a fresh interpretation of Olives at the Atlantis resort; I am really proud of the design, and of the entire team. "

Olives Atlantis joins the ranks of some of Atlantis’ favorite dining outposts from around the world including Chef Nobu Matsuhisa’s famed restaurant, Nobu, to the vibrant Southwestern cuisine of Bobby Flay’s nationally-acclaimed Mesa Grill or 3-starred Michelin Chef Jean Georges-Vongerichten’s Café Martinique.
